To prepare Traditional Bissara you need to:
- Soak dried Fava beans in water overnight to become soft, then rinse the Fava beans.
- In a large pot, boil the Fava beans until tender 1-1.5 hours.
- n a small pan, sauté minced garlic in olive oil until golden. Add one tablespoon of cumin, paprika, and chili pepper; cook for 5 minute
- Drain the cooked fava beans, reserving some cooking liquid.
- in a blender, combine Fava beans, garlic and spice mixture, and a pinch of salt. Blend until smooth, adding cooking liquid gradually for desired consistency.
- Adjust seasoning if needed.
- Serve warm with olive oil on the top and bread.
