Msemen or Moroccan pancake

Msemen is a traditional Moroccan pancake or Crepes that is often enjoyed for breakfast or as a snack. It is made from a simple dough that is folded and rolled out multiple times to create layers. Here’s a recipe to make msemen:

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, vegetable oil, and melted butter.
  3. Gradually incorporate the flour into the wet ingredients, mixing with your hands or a wooden spoon until a sticky dough forms.
  4. Transfer the dough onto a clean, lightly floured surface. Knead the dough for about 10 minutes until it becomes smooth and elastic.
  5. Divide the dough into 8 equal-sized balls. Place them on a baking sheet and cover them with a clean towel. Allow the dough to rest for about 30 minutes.
  6. Take one dough ball and flatten it with your hands to form a thin circle. Brush the surface with melted butter and fold the sides toward the center, overlapping slightly, to form a square shape. Repeat this process with the remaining dough balls.
  7. Heat a large non-stick pan or griddle over medium heat. Place one folded dough square on the hot pan and cook for about 2-3 minutes on each side, or until golden brown. Repeat with the remaining dough squares.
  8. Once cooked, remove the msemen from the pan and place them on a wire rack to cool slightly. You can stack them on top of each other to keep them soft.
  9. Serve the msemen warm with honey, butter, or your favorite spreads.
