Msemen is a traditional Moroccan pancake or Crepes that is often enjoyed for breakfast or as a snack. It is made from a simple dough that is folded and rolled out multiple times to create layers. Here’s a recipe to make msemen:
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, vegetable oil, and melted butter.
- Gradually incorporate the flour into the wet ingredients, mixing with your hands or a wooden spoon until a sticky dough forms.
- Transfer the dough onto a clean, lightly floured surface. Knead the dough for about 10 minutes until it becomes smooth and elastic.
- Divide the dough into 8 equal-sized balls. Place them on a baking sheet and cover them with a clean towel. Allow the dough to rest for about 30 minutes.
